Quinoa Jambalaya
200 g tofu (I feta cheese took, because tofu is too tasteless to me)
1 TBSP honey
1 Zwiebel(n), red, diced
1 bell pepper, diced red and yellow,
2 Rod/n celery, diced
2 carrots
1 garlic clove, crushed
1 Teaspoon Basil
½ Teaspoon thyme
200 g quinoa (red or yellow)
2 TBSP tomato paste
500 ml vegetable broth
and because I like more like it:
½ TSP Harissa
Salt and pepper
Preparation
Rinse quinoa thoroughly.
In a saucepan saute the onion, then add peppers, celery and carrots and sauté. Garlic, basil, and thyme to admit and cook briefly.
Quinoa, vegetable broth and tomato paste and Harissa to admit and covered Cook 20-25 minutes, until the liquid is absorbed. Season to taste.
Crispy FRY tofu/feta cheese in oil. To honey and saute for another minute.
Arrange feta cheese with the quinoa on a plate.
